Tomato-Mania!

Our tomato harvest has begun over at the RTCO Demonstration Garden. We have accumulated a great variety of tomatoes so far (as noted in the photo above) and we are now met with the challenge of what to do with them. If you are a member of the Tool Library, or want to become one, feel free to stop by the Lobby at RTCO and pick up a few of these fine looking tomaters.

We have been making the most of these tomatoes as well by slicing, dicing, and saucing them. My favorite food addiction right now is the the old standby: tomato, basil, and mozzarella sandwich. This helps put to good use two items from our garden and offers just enough of that comfort food taste in the middle of summer.

Here is a link to a nice, simple recipe for a wonderful Tomato, Basil, Mozz sandwich:

Not too much advice for this blog entry, just hoping that you are enjoying the fruits of your labor as much as we are ours! As for the tomatoes that are left over, we will can them, sauce them, or jar them and make the most of our harvest.
